I am configuring my email and I was wondering how many MX records I need for the email server to work?
This depends if you are using our email services (default) or an external email provider (e.g. Google Apps).
If you are using our services, you only need one MX entry. In fact this is already setup for you be default.
If you are using an external email provider, please contact them to find out what MX entries you should have.
