My client uses a 3rd party email (exchange) service. Are the SMTP authentication settings for Sendmail relative to Site5’s hosting server or supplied by the client’s IT company, who run the exhange server?

By default, sendmail will use our local mail server unless you specify the SMTP settings/authentication credentials. If you wanted to use your client’s exchange server, you would need the settings and credentials for that server.
